PROBLEM TO BE SOLVED: To provide a method for producing edible fat and oil with satisfactory fry stability capable of suppressing the increase of the secular acid value of fry oil and the production of bubbles upon fry heating, and the increase of a polar compound produced by thermal decomposition associated with oxidation without adding additive components to be formed into food additives, and edible fat and oil obtainable by the production method.SOLUTION: In the edible fat and oil C produced through a degumming step 3 a deoxidation step 4 a decoloration step 5 and a deodorization step 6 in this order, a deodorization distillate D distilled from crude oil derived from the same breed raw material is returned to the crude oil before the deodorization step.
