Disclosed are a dried persimmon manufacturing method including a skin thickening step and a dried persimmon manufactured through the same. The method includes: a sorting step of selecting a treatment target persimmon considering the shape and color of the persimmon; a washing step of removing foreign substances from the surface of the treatment target persimmon; a peeling step of peeling the treatment target persimmon; a cutting step of cutting the peeled persimmon into a plurality of pieces; a fumigating step of placing the cut pieces on a tray with air holes and making sulfuric smoke go through the pieces on the tray; a high temperature aging step of placing the fumigated pieces in a dryer including an inlet and outlet, taking hot air through the inlet at a predetermined speed, and aging the pieces by making the hot air go through the pieces, and then, discharging the hot air, including moisture evaporated from the pieces through the outlet, at a predetermined speed; a first drying step of drying the pieces by sending warm air, which is less hot than the hot air, to the pieces; and a skin thickening step of aging the pieces in a refrigerator at a low temperature for a predetermined time, and then, drying the pieces by sending warm air, which is the same temperature as the warm air of the first drying step, to the pieces.
