PURPOSE: A yam sediment and a producing method thereof are provided to enable users to easily apply yam having excellent nutrition to various kinds of food. CONSTITUTION: A producing method of a yam sediment comprises the following steps: washing fresh yam, and peeling the yam before steaming for 20-50 minutes using boiling water； adding ethanol to the steamed yam, and heating and concentrating the yam； and finely cutting the yam before storing in the low temperature. The starch yield of the yam sediment is 15-20%.본 발명은 증자, 농축, 및 분쇄 단계를 포함하는 마 앙금 제조방법 및 이에 의해 제조된 마 앙금에 관한 것이다. 본 발명에 따른 마 앙금의 제조방법은, 우수한 영양학적 성분을 가진 마를 식품 전반에 용이하게 사용할 수 있도록 앙금형태로 간단하게 제조할 수 있는 방법을 제공할 수 있다. 또한, 본 발명에 따른 마 앙금은 기능성 식품소재, 부형제, 증량제, 오블레이트 등의 제약산업 소재, 제지용, 섬유용 등의 산업소재로도 활용이 될 수 있는 장점이 있다.
