The present invention relates to an extract of chicken feet using a fermented soybean, which is extracted by heating 300 to 400 parts by weight of chicken feet, 30 to 40 parts by weight of aged black soybean, 10 to 20 parts by weight of ginger, 10 to 20 parts by weight of garlic, 30 to 40 parts by weight of onion, 10 to 20 parts by weight of shiitake mushroom, 10 to 20 parts by weight of chestnut husk and 150 to 250 parts by weight of water in a high temperature extractor at 110 to 120°;C for 15 to 20 hours. According to the present invention, bad smell of chicken feet is removed by immersing 300 to 400 parts by weight of the chicken feet in 400 to 500 parts by weight of water containing lotus and pine leaves for 24 hours.
