PROBLEM TO BE SOLVED: To provide a food product durability improvement agent capable of improving the physical changes in yield, discoloration and elasticity not only before heating but also after heating without exerting influence on the taste of a food product.SOLUTION: Provided is a food product durability improvement agent containing sodium acetate, calcium acetate and coated organic acid, in which the ratio of the calcium acerate is 5 to 140 pts.wt. to 100 pts.wt. of the sodium acetate.
