PROBLEM TO BE SOLVED: To provide a mold opening/closing apparatus for a food gel molded body, capable of sealing the output port to take out the gel molded body set on the lower end of a cylindrical mold so as to prevent sol solution from leaking when filling the sol solution, and opening the output port so as to take out the gel molded body without destroying its shape when taking out the gel molded body.
SOLUTION: This mold opening/closing apparatus is set with a cylindrical mold 42 set on the lower end with an output port to take out the food gel molded body of a prescribed shape obtained by storing food sol solution followed by cooling, a shutter 44 set on the lower side of the output port of the mold 42 and opening and closing the output port, and a reciprocating means sliding the shutter 44 in a reciprocating direction to the output port of the mold 42. Furthermore, a pushing-up means which pushes up the shutter 44 and seals the output port when the shutter 44 opening the output port of the mold 42 slides to a direction of blocking the output port of the mold 42 by the reciprocating means is set so as to take out the food gel molded body of a prescribed shape from the output port of the mold 42.
