The present invention relates to a composition for binding cereal bars and a manufacturing method of cereal bars using thereof. More specifically, a composition for binding cereal bars is obtained by the following steps: producing a syrup solution by mixing a sugar solution and minor ingredients producing a marshmallow solution by mixing gelatin and minor ingredients and mixing the syrup solution and the marshmallow solution to obtain a composition for binding cereal bars. Additionally, the present invention provides a manufacturing method of cereal bars which comprises a step of mixing the composition for binding cereal bars with raw materials for the cereal bars, a step of compressing and molding the mixture, and cooling and cutting the mixture to obtain the cereal bars.
