PROBLEM TO BE SOLVED: To provide an unfolding agent for gelatinized noodles for improving the unfolding property of the gelatinized noodles gelatinized by boiling or steaming the noodles, especially the unfolding agent for the gelatinized noodles effectively improving the unfolding property of the gelatinized noodles without impairing the original flavor and eat taste of the gelatinized noodles and also improving the unfolding property of the gelatinized noodles at a low cost, and to provide a method for producing the gelatinized noodles excellent in unfolding property and having a good taste by using the unfolding agent for the gelatinized noodles.SOLUTION: This unfolding agent for the gelatinized noodles contains a processed starch-decomposed material having &ge15 mPa s viscosity in an aqueous solution of 30 wt.% processed starch-decomposed material and &le3,000 mPa s viscosity in the aqueous solution of 10 wt.% processed starch-decomposed material. The unfolding agent for the gelatinized noodles provides the gelatinized noodles having the original flavor and taste of the gelatinized noodles and is excellent in unfolding property by applying it on the surface of the gelatinized noodles or immersing the gelatinized noodles in a solution containing the unfolding agent for the gelatinized noodles by coating the surface of the gelatinized noodles.COPYRIGHT: (C)2009,JPO&INPIT【課題】麺類を茹で或いは蒸煮によってα化したα化麺のほぐれ性を改良するα化麺用ほぐれ剤、特に、α化麺本来の風味や食味を損なうことなく、α化麺のほぐれ性を効果的に改良し、また、低コストでのα化麺のほぐれ性の改良が可能なα化麺用ほぐれ剤を提供すること、及び該α化麺用ほぐれ剤を用いて、ほぐれ性に優れ、味覚の良好なα化麺を製造する方法を提供すること。【解決手段】加工澱粉分解物の30重量%水溶液において15mPa・s以上、加工澱粉分解物の10重量%水溶液において3000mPa・s以下の粘度の加工澱粉分解物を含有するα化麺用ほぐれ剤からなる。本発明のα化麺用ほぐれ剤は、α化麺の表面に塗布するか、或いは、本発明のα化麺用ほぐれ剤を含有する溶液にα化麺を浸漬するかして、α化麺の表面にコーティングすることにより、α化麺本来の風味や食味を有し、ほぐれ性に優れたα化麺を提供する。【選択図】なし
