The present invention relates to a fermented composition for fatigue recovery using vitamins in young leaves with excellent antioxidant activity and, more specifically, to a lactic acid bacteria-fermented composition and a food composition comprising the same for fatigue recovery, which comprises the steps of: (a) manufacturing a culture medium by crushing and mixing vitamins in young leaves and fructooligosaccharides； (b) inoculating a Lactobacillus plantarum PMO 08 strain in the culture medium in step (a)； and (c) fermenting the culture medium inoculated with the strain in step (b). A lactic acid bacteria-fermented composition for fatigue recovery of the present invention using vitamins in young leaves with excellent antioxidant activity is capable of reducing a fatigue indicator, thus having effects in manufacturing a functional food for fatigue recovery and high industrial applicability.본 발명은 항산화활성이 우수한 비타민의 어린잎을 이용하는 것을 특징으로 하는 피로회복용 발효조성물에 관한 것으로, 더욱 상세하게는 (a) 비타민 어린잎 및 프락토올리고당을 분쇄 및 혼합하여 배양액을 제조하는 단계； (b) 상기 (a) 단계의 배양액에 락토바실러스 플란타룸 PMO 08(Lactobacillus plantarum PMO 08) 균주를 접종하는 단계； (c) 상기 (b) 단계의 균주가 접종된 배양액을 발효시키는 단계를 포함하여 제조된, 피로회복용 유산균 발효물 및 이를 함유하는 식품 조성물에 관한 것이다.본 발명의 피로회복용 유산균 발효물은 비타민 어린잎을 이용하므로 항산화활성이 매우 우수하며, 피로 지표물질을 경감시켜 피로회복용 기능성 식품 제조에 효과적이어서 산업상 이용가능성이 높다.
