PROBLEM TO BE SOLVED: To provide a method for producing a processed food containing a large number of lactic acid bacteria which reach the intestine in a survival state, and capable of being preserved for a long term.SOLUTION: A method for producing a lactic acid bacterium-containing processed food includes a culture medium formation step, a spawn formation step, and a spawn planting/cultivation/freeze-dry step. The culture medium formation step includes soaking soybeans in water at normal temperature followed by boiling, adding glucose to a filtrated extract, removing part of the extract in order to use the spawn formation step, re-heating the remainder of the extract followed by naturally cooling at normal temperature, and adding crushed vegetables and fruits to the product. The spawn formation step includes cultivating spawns of vegetable lactic acid bacteria, sterilizing the extract removed in the culture medium formation step, and cultivating by planting the spawns into the sterilized extract. The spawn planting/cultivation/freeze-dry step includes cultivating by planting the spawns obtained in the spawn formation step into the culture medium obtained in the culture medium formation step followed by adding sugar, and refrigerating the product to stabilize followed by freeze-drying.SELECTED DRAWING: Figure 1
