The present invention relates to a method for manufacturing black Cornus officinalis and black Cornus officinalis produced by the same. The method comprises the following steps: (a) mixing and preparing berries of Firmiana simplex, berries of Aralia elata and Inula britannica； (b) adding water to the mixture prepared in the step (a), extracting the same and preparing an extract； (c) spreading the extract prepared in the step (b) to Cornus officinalis and firstly aging the same； (d) secondarily aging the firstly aged Cornus officinalis in the step (c)； (e) immersing the secondarily aged Cornus officinalis in the step (d) in a calcium solution and taking the same out； (f) thirdly aging the taken out Cornus officinalis in the step (e)； and (g) fourthly aging the thirdly aged Cornus officinalis and drying the same.본 발명은 (a) 벽오동 열매, 두릅나무 열매 및 금불초를 혼합하여 준비하는 단계； (b) 상기 (a)단계의 준비한 혼합물에 물을 첨가하여 추출한 후 여과하여 추출액을 제조하는 단계； (c) 산수유에 상기 (b)단계의 제조한 추출액을 뿌려주면서 1차 숙성시키는 단계； (d) 상기 (c)단계의 1차 숙성시킨 산수유를 2차 숙성시키는 단계； (e) 상기 (d)단계의 2차 숙성시킨 산수유를 칼슘 용액에 침지한 후 꺼내는 단계: (f) 상기 (e)단계의 꺼낸 산수유를 3차 숙성시키는 단계； 및 (g) 상기 (f)단계 3차 숙성시킨 산수유를 4차 숙성시킨 후 건조하는 단계를 포함하여 제조하는 것을 특징으로 하는 흑산수유의 제조방법 및 상기 방법으로 제조된 흑산수유에 관한 것이다.
