PROBLEM TO BE SOLVED: To provide a method for producing vegetables with effect of health maintenance and prophylaxis of diseases of consumers through reinforcing and inducing health functionality inherited from vegetables. SOLUTION: A highly functional cultivation method for leaf vegetable agricultural products increases the diabetes suppressing function of spinach and the expression promoting function of erythropoietin production gene promoting blood formation function by cultivating spinach through watering liquid fertilizer with high calcium concentration and/or water with high calcium concentration, or suppressing water content in a medium during cultivation and adding water stress to spinach, preferably through bringing pH value of the medium to >2.0, or using liquid fertilizer subjected to magnetic treatment for spinach cultivation.
