The invention relates to a foodstuff comprising proteins essentially of vegetable origin capable of being obtained by a process comprising the steps consisting in: (iv) selecting a natural source of vegetable proteins comprising nutrients: (v) extracting a vegetable juice from the natural source of vegetable proteins, said vegetable juice comprising almost all or all of the nutrients contained in the natural source of vegetable proteins and (vi) treating said vegetable juice from step (ii) with transglutaminase, characterized in that when the natural source of vegetable proteins consists exclusively of soya, said foodstuff also comprises a food ingredient of non-animal origin.Linvention concerne un aliment comprenant des protéines essentiellement dorigine végétale susceptible dêtre obtenu par un procédé comprenant les étapes consistant à: (iv) Sélectionner une source naturelle de protéines végétales comprenant des nutriments (v) Extraire un jus végétal à partir de la source naturelle de protéines végétales, ledit jus végétal comprenant la quasi-totalité ou la totalité des nutriments contenus dans la source naturelle de protéines végétales et (vi) Traiter ledit jus végétal de létape (ii) avec de la transglutaminase, caractérisé en ce que lorsque la source naturelle de protéines végétales est constituée exclusivement de soja, ledit aliment comprend en outre un ingrédient alimentaire dorigine non animale.
