The present invention relates to a manufacturing method of oil using fruit of ginseng by using a mixture solvent of a polar solvent and a non-polar solvent and, more specifically, a method for efficiently extracting ginsenoside, vitamin E from flesh and skin of fruit of ginseng and unsaturated fatty acid like omega 3 and 6 from seeds of ginseng located in the fruit of the ginseng wherein the manufacturing method of oil using the mixture solvent of the polar and non-polar solvent is allowed to manufacture oil having high content polar active ingredients like ginsenoside and polysaccharide and high content non-polar active ingredient like vitamin E and unsaturated fatty acid compared with oil extracted with use of a single solvent which is polar or non-polar solvent.COPYRIGHT KIPO 2015본 발명은 극성용매 및 비극성용매의 혼합용매를 이용한 인삼열매 오일의 제조방법에 관한 것으로, 더욱 상세하게는 인삼열매의 과육과 과피에 풍부한 진세노사이드, 비타민 E 등과 인삼열매 내부에 존재하는 인삼씨에 풍부한 오메가 3와 오메가 6 등의 불포화 지방산을 동시에 추출할 수 있는 효율적인 추출방법에 관한 것이다.본 발명에 따른 극성용매 및 비극성용매의 혼합용매를 이용한 인삼열매 오일 제조방법에 의하면, 단일용매(극성 또는 비극성)로 추출된 인삼열매 오일보다 진세노사이드 및 다당체를 비롯한 극성유효성분과 비타민 E 및 불포화 지방산을 비롯한 비극성 유효성분의 함량이 높은 오일을 수득할 수 있다.
