The apparatus for defrosting or regenerating frozen foods comprises a container (1) partially filled with a heat-carrying material (2) heated to a predetermined temperature, said container (1) having an opening (1a) through which a frozen food (3) is contacted with said heat-carrying material (2) for allowing heat transfer from the heat-carrying material (2) to said frozen food (3) for defrosting or regenerating it. Said heat-carrying material is a material which is in a solid state (2) at room temperature and which changes from the solid state to a liquid state (2a) at a temperature higher than 125°C, allowing immersing the frozen food in said liquid (2a).
