PROBLEM TO BE SOLVED: To provide a tablet type thickening composition which decomposes quickly and exhibits viscosity, generates no lump, is excellent in forcefulness of a solution has no deterioration of flavor of thickened foods, and a thickening method of liquid foods using the tablet type thickening composition.SOLUTION: There is provided a tablet type thickening composition containing a xanthan gum of 5 to 13 mass%, a tamarind seed gum of 7 to 15 mass%, a guar gum of 4 to 10 mass%, CMC sodium salt of 1 to 4 mass% and glucose of 48 to 70 mass% and having average particle diameter of the glucose of 100 to 190 μm. There is provided a tablet type thickening composition having total of a foaming agent and organic acid of 3 to 15 mass%. There is also provided a thickening method of liquid foods for dissolving the tablet type thickening composition into the liquid foods and thickening the same.SELECTED DRAWING: None【課題】速やかに崩壊して粘度発現し、ダマが発生せず、溶液の澄明性に優れ、且つ増粘した食品の風味を損なうことのない錠剤型増粘組成物、及び該錠剤型増粘組成物を使用する液状食品の増粘方法の提供。【解決手段】キサンタンガムを5~13質量%、タマリンドシードガムを7~15質量%、グアガムを4~10質量%、CMCナトリウム塩を1~4質量%、及びブドウ糖を48~70質量%含有し、該ブドウ糖の平均粒子径が100~190μmである錠剤型増粘組成物。発泡剤と有機酸の合計が3~15質量%である錠剤型増粘組成物。また、前記錠剤型増粘組成物を液状食品に溶解して増粘させる液状食品の増粘方法。【選択図】なし
