PROBLEM TO BE SOLVED: To provide a puffed food material having as the essential raw material, collagen which has a high nutritive value and is expected of beauty effect, and having, for instance, further excellent crispy feeling in a dried condition more than a conventional food material, and excellent meat-like palate feeling in a puffed condition and to provide a food having the puffed food material as the essential food material.

SOLUTION: This puffed food material is obtained by puffing a raw material having collagen as the essentials by extracting by an extruder. The food having the puffed food material as the essential food material is also provided.
