Provided is a method for producing an extruded/molded article of isolated soy protein having meat-like scent. To this end, the production method includes a step of extrusion-molding a mixture composed of isolated soy protein and gluten, wherein the gluten content is greater than or equal to 20% of the total amount of dried solid, and the moisture content is less than or equal to 55% of the total amount.
