PROBLEM TO BE SOLVED: To provide a method for producing an oil and fat having a high content of POS from a vegetable oil and fat.SOLUTION: The method for producing an oil and fat having a high content of POS includes: a step of subjecting an oil and fat composed of a blend of a vegetable oil and fat with a fatty acid and a fatty acid derivative as a raw material to enzymatic transesterification； a step of removing a fraction crystallized by a separation process from the oil and fat subjected to enzymatic transesterification； and a step of removing the fatty acid and the fatty acid derivative from the separated oil and fat. Thus-produced oil and fat having a high content of POS uses as a raw material a vegetable oil and fat composed mainly of a palm oil, a vegetable oil and fat, a vegetable olein oil composed mainly of an exotic oil and fat or a vegetable oil and fat composed mainly of a sunflower oil, contains POS in a high content in a triglyceride composition and has characteristics differentiated from the conventional substitute oil and fat for cocoa butter. By virtue of the characteristics, a fat and oil composition has the same physical properties and the same composition as the higher natural cocoa butter and can be substituted for cocoa butter in a ratio of 1:1.SELECTED DRAWING: Figure 1【課題】植物性油脂からＰＯＳ高含量油脂を製造する方法の提供。【解決手段】植物性油脂と、脂肪酸及び脂肪酸誘導体の配合で構成される油脂を原料として酵素的エステル交換反応する工程；前記酵素的エステル交換反応した油脂から分別過程により結晶化された分画を除去する工程；及び前記分別油脂から脂肪酸及び脂肪酸誘導体を除去する工程を含む、ＰＯＳ高含有油脂の製造方法。製造されたＰＯＳ高含有油脂は、パーム油が主成分の植物性油脂、外来油脂を主成分とする植物性オレイン油又はひまわり油を主成分とする植物性油脂を原料として、トリグリセリド組成中にＰＯＳを高含量で含み従来のココアバター代替脂と差別化された特性を有し、この特性により高級天然ココアバターと物性及び組成が同一である、１：１で代替可能な油脂組成物。【選択図】図１
