PROBLEM TO BE SOLVED: To provide a method for more easily and efficiently extracting and producing essential oils and the like derived from plants (for example, citrus fruits and vegetables).SOLUTION: A plant body is crushed by ultrahigh-pressure water having a discharge pressure of 20 MPa or more (for example, 50-100 MPa) at a flow rate of 20-40 L/min, and a liquid obtained by solid-liquid separation of the crushed plant body is separated into essential oils and a plant extract by centrifugal separation treatment, whereby the essential oils and the plant extract can be obtained very easily and efficiently to eliminate the necessity of a special manufacturing machine and eliminate a large cost load.
