To provide a sucrose fatty acid ester which is excellent in solubility when being dissolved into water and is excellent in a moisturizing property (moisture retention ability) and, further and can remarkably enhance the viscosity of an oil-in-water type emulsified composition.
SOLUTION: The sucrose fatty acid ester comprises: mono-ester component of which the degree of esterification is one and of 5 to 14 wt.% di-ester component of which the degree of esterification is two and of 55 to 65 wt.% and ester component of which the degree of esterification is three or more and of 26 to 35 wt.%. Further, an emulsifier for the oil-in-water type emulsified composition and containing the sucrose fatty acid ester is provided.
