PROBLEM TO BE SOLVED: To provide a sucrose fatty acid ester which is excellent in solubility when dissolved in water, is excellent in moisture retaining property (water-holding capacity), and further can specifically ameliorate stability with time of the oil-in-water type emulsion compositions.
SOLUTION: The sucrose fatty acid ester is composed of 26-35 wt.% of a monoester component having an esterification degree of 1, 55-65 wt.% of a diester component having an esterification degree of 2, and 5-14 wt.% of an ester component having an esterification degree of 3 or more. The emulsifier is for the oil-in-water type emulsion compositions containing the sucrose fatty acid ester.
