The present invention provides a method for purifying horse oil, comprising the steps of: selecting, from slaughtered horse meat, a part containing fat well accumulated therein, removing the blood and the meat, washing the obtained product, and then vacuum-packaging the same refrigerating the vacuum-packaged horse oil performing a selection step of re-removing the blood and meat parts of the refrigerated horse oil vacuum pulverizing the selected horse oil at a temperature of 20°C or lower and liquefying the same obtaining a first purified horse oil by fully putting the liquefied horse oil into a dissolver, removing oxygen, sealing the same, dissolving the same at a temperature of 35-80°C, and filtering the same mixing the first purified horse oil and a 10% β-cyclodextrin aqueous solution in a ratio of 1:1 by weight sealing the mixed first purified horse oil, and then leaving the same alone at a temperature of 20-30°C for 12-24 hours obtaining a second purified horse oil by heating, in a water bath, and melting the left-alone first purified horse oil, and then filtering the same and putting the second purified horse oil in an container, and then maturing the same at a temperature of 3-10°C for 24 hours.
