A method, and related kits, for identifying swine predicted to have one or more of elevated skeletal muscle levels of carnosine and improved meat quality includes determining a genotype of the swine with respect to one or more of the SLC15A4 c.658A>G single nucleotide polymorphism and the SLC15A4 c.818G>A single nucleotide polymorphism. Swine having the AA genotype at the SLC15A4 c.658A>G locus or the GG genotype at the SLC15A4 c.818G>A locus or the SLC15A4 c.658AA/c.818GG diplotype have been found to have higher muscle carnosine levels and/or improved meat quality parameters.
