PROBLEM TO BE SOLVED: To provide a method for producing a frozen fruit processed product the moderate hardness of which is kept in frozen condition and which has palate feeling like that of fresh fruit to provide a frozen strawberry processed product and to provide frozen confectionery using the same.

SOLUTION: The method for producing frozen fruit processed product comprises: a process of reducing pressure in a reaction system containing a pectin esterase-containing aqueous solution while fruit flesh is soaked in the pectin esterase-containing aqueous solution having sugar concentration 1-2 times that of the fruit flesh a process of taking the fruit flesh from the pectin esterase-containing aqueous solution followed by soaking the fruit flesh in a sugar-containing aqueous solution to adjust the sugar concentration of the fruit flesh to 25-50 degrees and a process of taking the fruit flesh out of the sugar-containing aqueous solution followed by freezing the fruit flesh.
