PURPOSE: A producing method of a natural seasoning is provided to prevent the problems caused by using chemical seasonings, and to offer the taste and the flavor of aged black garlic and ginseng. CONSTITUTION: A producing method of a natural seasoning comprises the following steps: mixing 50~60% of dried anchovy with 40~50% of purified water, and double boiling to obtain an anchovy extract; mixing 50~60% of dried tangle weed with 40~50% of purified water, and double boiling to obtain a tangle weed extract; obtaining a smoked skipjack tuna extract, an aged black garlic extract, and a ginseng extract; filtering and cooling the extracts; mixing the extracts with 10~20% of soy sauce and 5~10% of bay salt, and adding 10~15wt% of purified water before boiling; and filtering, cooling, and sterilizing the mixture.본 발명은 해산물 추출액들, 흑마늘 및 인삼을 이용하므로서 맛과 영양 면에서 우수한 천연 조미료 및 그 제조방법에 관한 것이다. 본 발명은 멸치 추출액 15-25중량%, 다시마 추출액 15-25중량%, 가다랑어 추출액 15-25중량%, 흑마늘 추출액 10-20중량%, 인삼 추출액 10-20중량%, 콩간장 10-20중량%, 및 천일염 5-10중량% 를 포함하는 천연 조미료임을 특징으로 한다. 또한, 본 발명은 이 성분들을 포함하는 천연 조미료를 제조하는 방법도 제공된다.
