PROBLEM TO BE SOLVED: To provide a manufacturing method of rolling sushi having no discomfort on a cutting surface and achieving flavor originally obtained by rolling sushi.SOLUTION: A manufacturing method includes an adhesion process S101 for adhering a binder which binds ingredients each other to a surface of raw material ingredients to obtain binder-adhered ingredients, a molding process S102 for molding the binder-adhered ingredients to a shape of a wound core by accommodating the binder-adhered ingredients to a container for wound core, a pressure reducing process S103 for putting the binder-adhered ingredients accommodated in the container for wound core and reducing pressure in a sealed container, a heat sterilization process S104 for sterilizing the binder-adhered ingredients by heating the binder-adhered ingredients accommodated in the container for wound core, a mounting process S105 for taking the binder-adhered ingredients from the container for wound core and mounting the same on rice arranged with flatness and a winding process S106 for obtaining rolling sushi by winding the rice to the binder-adhered ingredients at a state that the binder-adhered ingredients are mounted on rice in the mounting process.SELECTED DRAWING: Figure 1COPYRIGHT: (C)2018,JPO&INPIT【課題】切断面に違和感を覚えることなく、また、巻き寿司本来の風味を奏させる巻き寿司の製造方法を提供する。【解決手段】原料具材の表面に、具材同士を結着させる結着剤を付着させて結着剤付着具材を得る付着工程S101と、結着剤付着具材を巻芯用容器に収容することで、結着剤付着具材を巻芯の形状に成型する成型工程S102と、巻芯用容器に収容された結着剤付着具材を密閉容器に入れて、密閉容器内を減圧する減圧工程S103と、巻芯用容器に収容された結着剤付着具材を加熱することで、結着剤付着具材を殺菌する加熱殺菌工程S104と、結着剤付着具材を巻芯用容器から取り出して、平坦に配置されたシャリの上に載置する載置工程S105と、載置工程においてシャリの上に結着剤付着具材が載置された状態で、シャリを結着剤付着具材に対して捲回することで巻き寿司を得る捲回工程S106と、を含む。【選択図】図1
