PROBLEM TO BE SOLVED: To provide a method for masking sour taste which masks the sour taste derived from vinegar, acidulant, or the like, particularly, reduces harsh acidity, sour taste peculiar to sour taste, and is capable of providing an edible product giving a mellow taste.SOLUTION: The sour taste of the edible product providing sour taste is masked by adding malt extract to the product. The 0.005-0.2 mass% of the malt extract is added to the edible product providing sour taste.
