To provide a method for roasting a fish by solving problems in that conventionally, as a food processing method for soften the bones of pacific saury, a method for cooking for a long time or cooking in a pressurized pot are performed, but they show a defect of lacking flavor, and also there is a method for roasting the fish for a long time at a low temperature and but there are problematic points of developing the elution of nutrition and water content.

SOLUTION: The method for roasting the fish includes attaching wheat flour ON the surface of the pacific saury as a preparatory processing of a roasting step to form a thin film, baking the gluten of the wheat flower ON the surface of the pacific saury and then roasting at a temperature condition of surrounding temperature of 100 to 130° C for three hours. Therefore, it is possible to prevent the elution of nutrition or water content by roasting after the preparatory processing and to obtain the roast fish having a softness to the bones and having a good flavor.
