PURPOSE: A method of manufacturing functional fermented coffee using a fast-fermented bean paste is provided to manufacture fermented coffee which produces useful components for the human body and is softly fermented by the activity of various lactobacilli and organic acids.CONSTITUTION: A method of manufacturing functional fermented coffee using a fast-fermented bean paste comprises: washing beans with clean water, macerating the same in water for 24 hours, and removing water by placing the beans on a basket adding 3-4 times of drinking water based on the weight of the soaked beans and boiling the same at 113-115 deg. Celsius for 5-6 hours removing water by scooping the boiled beans with the basket and cooling the same to 40-45 deg. Celsius washing the peeled and dried raw coffee with clean water and macerating the same for 24 hours mixing the macerated coffee and the boiled bean at a weight ratio of 6:4 inoculating the mixed boiled beans and macerated coffee with a bacillus strain at a 800:2 weight ratio fermenting the inoculated mixed boiled beans and macerated beans in a fermentation room at 38-45 deg. Celsius for 24-36 hours separating coffee from the completed fermentation product, washing, and hot-air drying the same placing the dried coffee in a container and roasting the same rapidly cooling the fermented coffee at -20 deg.
