PURPOSE: A producing method of salted shrimp powder is provided to prevent calcium in shrimp from being discharged from the human body without being absorbed. CONSTITUTION: A producing method of salted shrimp powder comprises the following steps: dipping salted shrimp into organic acid, and drying and crushing; soaking the crushed shrimp into milk, and drying to obtain salted shrimp pre-treated powder; separating shells and tails from fresh shrimp; dipping the shells and tails into a 5% sodium hydroxide solution, and boiling for 5 hours before washing with water; dipping the washed shells and tails in a 5% hydrochloric acid solution for 1 day, and washing with the water before dipping into a potassium permanganate solution to obtain chitin; boiling the chitin in an alkaline solution to obtain chitoic acid, and washing with the water; adding hydrochloric acid to the chitoic acid for reacting for 6-8 hours at 50-70 deg C, or adding a chitoic acid decomposing enzyme to obtain chitoic acid oligosaccharide; and mixing the chitoic acid oligosaccharide with shrimp pre-treated powder.본 발명은 새우젓 분말 제조방법에 관한 것으로서, 좀더 상세하게는 새우에 다량 함유된 칼슘의 체내흡수율을 향상시키기 위하여, 새우젓을 건조 및 분쇄하여 분말화하고 여기에 새우로부터 제조되는 키토산 올리고당을 첨가하여 새우젓 분말을 제조하는 방법에 관한 것이다.본 발명에 따른 새우젓 분말 제조방법은 새우젓을 분말로 제조함으로써 유용성분이 다량 함유된 새우를 손쉽게 이용할 수 있으며, 또한 새우젓 분말 섭취시 새우에 다량 함유되어 있는 칼슘의 체내흡수율을 높일 수 있게 되어 칼슘의 손실을 줄일 수 있고, 체내흡수가 되지 않는 키틴질을 올리고당 형태로 흡수할 수 있도록 한다.
