PROBLEM TO BE SOLVED: To provide oil and fat compositions deep in preferable taste originated in hydrogenated oil and fat, exhibiting oxidation stability, and capable of producing foods decreased in trans fatty acid content, and to provide a production method thereof.
SOLUTION: It is found out that, in the production method of partially hydrogenated oil and fat, the oil and fat having specially deep hydrogenated oil and fat taste compared with conventionals can be produced. By oil and fat compositions compounded with a little amount of the partially hydrogenated vegetable oil and fat containing ≥0.1 ppm 3,7,11,15-tetramethyl-2-hexadecene, the oil and fat compositions having deep taste originated in hydrogenated oil and fat, exhibiting oxidation stability and decreased in trans-fatty acid content can be obtained.
