PROBLEM TO BE SOLVED: To provide an unrefined sweetener high in nutritive value and satisfactory in flavor.SOLUTION: Provided is a method for producing a sweetener comprising: a gelatinization step where germinated brown rice is gelatinized and a saccharization step where the gelatinized germinated rice is added with malt and/or rice malt, and the same is saccharized. The method may include a heating step where the saccharized matter obtained in the saccharization step is heated and is boiled down till it is made into a candy shape as well. The method may include a pulverization step where the germinated brown rice is pulverized before the gelatinization step as well.
