A process for the extraction of Vitamin E from annatto plant matter is disclosed wherein annatto seed matter is subjected, before extraction, to acidification using amla fruit matter. After the acidification, the mixture of the two plant matters is extracted by water. The acidification converts the vitamin E compounds in the plant matter into more water-soluble forms thus enhancing the vitamin yield: More of the vitamin is obtained in the ester form than in the form of vitamin alcohols. Processing time is reduced.La présente invention concerne un procédé dextraction de vitamine E à partir dun matériau végétal provenant du rocou. Des graines de rocou sont soumises, avant extraction, à une acidification au moyen de fruits du groseillier indien. Après lacidification, le mélange des deux matériaux végétaux est soumis à une extraction à leau. Lacidification convertit les composés de type vitamine E présents dans le matériau végétal en formes plus solubles dans leau, ce qui améliore le rendement en vitamine. Une plus grande quantité de vitamine est obtenue sous la forme dun ester que sous la forme dun alcool. La durée de traitement est, par ailleurs, réduite.
