PROBLEM TO BE SOLVED: To provide a manufacturing method of a fish meat processed composition using fish meat as a raw material and capable of being industrially more efficiently produced by reducing bitter taste compared to conventional methods and the fish meat processed composition with reduced bitter taste.SOLUTION: [1] There is provided a manufacturing method of a fish meat processed composition including a process 1 for inactivating a protein degrading enzyme contained by fish meat to obtain a fish meat-derived composition and a process 2 for adding a bacterium-derived protein degrading enzyme (enzyme 1) and microorganism-derived protein degrading enzyme (enzyme 2) to the fish meat-derived composition sequentially to apply the fish-derived composition to an enzyme reaction, then inactivating the enzymes 1 and 2 to obtain the fish meat processed composition. There is provided a manufacturing method of the fish meat processed composition, where the fish meat derived composition is a liquid phase by solid solution separation after inactivating protein degrading enzyme contained in the fish meat and the fish meat processed composition is a liquid phase obtained by solid and liquid separation after inactivating the enzyme 1 and the enzyme B, and the fish meat processed composition is a concentrate by concentrating the liquid phase or a powder by removing liquid.
