The composition of the protein from the meat stock of muscle tissue of animals containing sacroplasmic protein and myofibrillar protein from the stock of meat non-processed meat obtained by a method including: a. mixing said meat stock of ground animal muscle tissue with a food acid composition to produce an aqueous acidified protein solution of animal muscle tissue with a pH of less than about 3.5.b. mixing said aqueous acidified protein solution from meat stock with a food alkali composition to obtain an aqueous composition of meat stock protein with a pH of from about 4.7 to about 11.0 with precipitation of said protein and c. removing said precipitated protein. 2. The composition of claim 1, wherein the meat stock is stock from beef. 3. The composition according to claim 1, in which the meat stock is a stock from pork. 4. A composition according to claim 1, in which the meat stock is a stock from mutton. The composition of claim 1, wherein the meat stock is chicken stock. 6. The composition according to any one of paragraphs. 1-5, in which the pH of the aqueous acidified solution is from about 2.5 to about 3.5.7. The composition according to any one of paragraphs. 1-5, in which the pH of the precipitated protein is from about 5.5 to about 9.5.8.
