A method of obtaining a hemp protein product having a protein content of at least about 60 wt. %, preferably at least about 90 wt. %, (N × 6.25) in terms of dry matter, which contains: (a) extraction of the hemp protein source with an aqueous solution of calcium salt, so as to cause hemp protein to solubilize from the protein source and with the formation of an hemp protein aqueous solution, ( b) at least partially separating an aqueous solution of hemp protein from a residual source of hemp protein, (c) it is possible to dilute an aqueous solution of hemp protein, (d) adjusting the pH of the aqueous solution of hemp protein to a pH of from about 1.5 to about 4.4 to obtain acidified aqueous solution of protein co nopli, (e) it is possible to lighten the acidified hemp protein solution, if the solution is not yet clear, (f) alternatively, from stage (b) to stage (e), it is possible to dilute and then adjust the pH of the combined aqueous solution of hemp protein and a residual protein source hemp to a pH of from about 1.5 to about 4.4, then separating the acidified aqueous solution of hemp protein from a residual source of hemp protein, (g) it is possible to concentrate the aqueous solution of hemp protein while maintaining the ionic strength substantially constant using and the use of selective membranes, (h) diafiltering may possibly hemp concentrated protein solution, and (i) may possibly drying the concentrated and optionally diafiltered protein solution konopli.2.
