596964 Disclosed is a process of preparing a canola protein product having a protein content, which includes: (a) optionally (i) partially concentrating the supernatant from the precipitation of a canola protein micellar mass to a concentration of 50 g/L or less, or (ii) concentrating the supernatant from the precipitation of a canola protein micellar mass to a concentration of at least 50 g/L; (bI) adding a calcium salt (i) to supernatant from the precipitation of canola protein micellar mass in the absence of optional step (a) to provide a conductivity of 5 to 30 mS to form a calcium phytate precipitate, or (ii) to the partially concentrated supernatant or concentrated supernatant in the presence of optional step (a) to provide a conductivity of 2 to 30 mS to form a calcium phytate precipitate, (iii) removing precipitated calcium phytate from the resulting solution to provide a clear solution, (iv) optionally adjusting the pH of the clear solution to 2.0 to 4.0 to form a pH-adjusted clear solution, and (v) in the absence of optional step (au) or in the presence of step (ai), concentrating the optionally pH-adjusted clear solution to a concentration of at least 50 g/L to form a clear concentrated canola protein solution, or (bII) (i) adding an initial amount of calcium salt to supernatant from the precipitation of canola protein micellar mass to provide a conductivity of 1 to 3.5 mS and insufficient to cause precipitation of calcium phytate, (ii) adjusting the pH of the resulting solution to 2.0 to 4.0 to form an acidified solution, (iii) partially concentrating the acidified solution to a concentration of 50 g/L or less, (iv) adding a further quantity of a calcium salt to the partially concentrated solution to provide a conductivity of 4 to 30 mS and to cause a precipitate to form, (v) removing the precipitate from the resulting solution to provide a clear pH-adjusted solution, and (vi) concentrating the clear pH-adjusted solution to a concentration of at least 50
