The present invention relates to a method to manufacture anion red pepper powder comprising a charcoal extract emitting large amounts of anions which allows to maintain a long period of freshness by preventing oxidation on the food. The present invention is characterized by comprising: a charcoal fermentation step (S10) to mix malt and purified water to the charcoal powder and then aging the mixture; a charcoal filtering step (S20) to remove foreign substances by passing a charcoal fermented liquid wherein purified water is mixed to a supernatant liquid generated by performing a first hot water extraction by mixing again the charcoal fermented product with purified water through a filter container wherein activated fine charcoal shaped like a disk and hanji paper yarn layers forming the disk shape by twisting a plurality of them in a concentric circle are alternatively laminated thereon; a steam step (S30) to mix, into the charcoal extract filtered, 100-150 meshes of red pepper powder and inserting the mixture into a bamboo container having notches of 5-10 cm in length to form layers, and then the mixture steamed by combusting fine charcoal; a drying step (S40) to mix 70 wt% of the steamed red pepper powder and 30 wt% of red powder without charcoal, and then adjusting the moisture content of the mixture to be within 10%; and a selection step (S50) to filter the foreign substances for several times by passing the dried red pepper powder through a metal foreign substance detector.본 발명은 음식의 산화를 억제하여 장기간의 신선도를 유지하게 해주는 음이온을 다량 방출하는 숯 추출물이 포함되는 음이온고춧가루의 제조방법에 관한 것으로서, 숯 분말에 엿기름과 정제수를 혼합하여 숙성시키는 숯발효단계(S10);와, 숯 발효물에 다시 정제수를 혼합하여 1차 열수 추출하여 발생되는 상등액에 정제수를 혼합한 숯 발효액에 원판 형상의 활성백탄 숯과 동심원 형태로 다수 개씩 꼬여져 원판 형상을 이루는 한지사 층이 교번 적층되는 필터 용기에 통과시켜 이물질을 제거하는 숯여과단계(S20);와, 여과된 숯 추출물에 100 내지 150 메쉬로 고추분말을 혼합하고 5 내지 10 cm 의 길이로 절각된 대나무 통에 적층 투입한 후, 비장탄 숯을 연소시켜 증숙하는 증숙단계(S30);와, 상기 증숙된 고추분말 70 중량%와 숯을 포함하지 않은 고추분말 30 중량%를 혼합하여 수분함유율을 10 % 이내로 조절하는 건조단계(S40);와, 건조된 고추분말을 금속성이물질검출기에 통과시켜 다수
