PROBLEM TO BE SOLVED: To provide a method for producing 100 percent buckwheat noodles using only a viscous extract containing fucoidan extracted from alga Sargassum horneri, in view of not having found a "thickening" material that can obtain knowledge such as easily shaping buckwheat flour, easily making buckwheat noodles, not impairing aroma, easily thickening, smoothly going down the throat, having good taste of buckwheat noodles, and keeping well for a long time although various ways and means have been devised to obtain 100% buckwheat noodles.SOLUTION: The 100 percent buckwheat noodles are obtained using only buckwheat flour and a highly viscous extract containing fucoidan extracted from blown alga Sargassum horneri. The highly viscous extract containing fucoidan extracted from blown alga Sargassum horneri is mixed into buckwheat flour, and kneading, rolling, cutting and boiling processes are performed.COPYRIGHT: (C)2013,JPO&INPIT【課題】十割蕎麦を得ようとして種々の工夫がなされているが、蕎麦粉が纏まり易い、打ち易い、香りを損なわない、つなぎ易い、喉越しが良い、蕎麦の旨味がある、日持ちがする等の知見を得る「つなぎ」材は見当たらなかった。藻アカモクより抽出したフコイダンを含む粘状を帯びた抽出液のみを使用する十割り蕎麦の製造方法を提供する。【解決手段】褐藻アカモクより抽出したフコイダンを含む高粘度抽出液と蕎麦粉のみを原料として用いた十割り蕎麦と、褐藻アカモクより抽出したフコイダンを含む高粘度抽出液を蕎麦粉に混入して練り合せる捏ね、のし、切り、ゆでの工程を行う。【選択図】なし
