The present invention relates to a method for preparing a functional fermented brown rice containing flavonoid, and more particularly, to a method for preparing fermented brown rice having excellent functionality due to a high content of flavonoidby being fermented by using a balsam apple and gynura procumbens. The method for preparing functional fermented brown rice containing flavonoid of the present invention comprises: a primary fermentation step of primarily fermenting medicinal herbs mixed with a balsam apple and gynura procumbens at 20 to 36°C for 1 to 10 days； a washing step of washing the fermented medicinal herbs obtained in the primary fermentation step with water； a vacuum low-temperature extraction step of applying purified water to the fermented medicinal herbs after the washing step to extract same at 60 to 80°C for 2 to 20 hours in vacuum so as to obtain a medicinal herb extract； a concentration step of concentrating the medicinal extract in the volume of 1/10 to 1/5 to obtain a medicinal herb concentrate； and a secondary fermentation step of obtaining a fermented brown rice containing flavonoids by mixing 1 to 10 parts by weight of the medicinal herbal concentrate with respect to 100 parts by weight of brown rice, and immersing the brown rice in the medicinal herbal concentrate to secondly ferment the same at a low temperature at 10 to 20°C for 1 to 7 days.본 발명은 플라보노이드를 함유하는 기능성 발효현미의 제조방법에 관한 것으로서, 더욱 상세하게는 여주와 명월초를 이용하여 발효시킴으로써 플라보노이드 함량이 높아 기능성이 우수한 발효현미의 제조방법에 관한 것이다. 본 발명의 플라보노이드를 함유하는 기능성 발효현미의 제조방법은 여주와 명월초가 혼합된 약초를 20 내지 36℃에서 1 내지 10일 동안 1차 발효시키는 1차발효단계와, 1차발효단계에서 수득한 발효약초를 물로 세척하는 세척단계와, 세척단계 후 상기 발효약초에 정제수를 가해 60 내지 80℃에서 2 내지 20시간 동안 진공추출하여 약초추출액을 얻는 진공저온추출단계와, 약초추출액을 1/10~1/5의 부피로 농축하여 약초농축액을 얻는 농축단계와, 현미 100중량부에 대하여 상기 약초농축액 1 내지 10중량부를 혼합하여 상기 현미를 상기 약초농축액에 적신 다음 10 내지 20℃의 저온에서 1 내지 7일 동안 2차 발효시켜 플라보노이드를 함유하는 발효현미를 수득하는 2차발효단계를 포함한다.
