Process for the stereoselective preparation of gamma-lactone (R) or (S), characterized in that microbial biosynthesis of gamma-lactone is carried out, said biosynthesis being carried out from at least one substrate chosen from fatty acids from C5 to C20 using a strain chosen from those allowing a C4 stereoselective hydroxylation of said substrate, in particular Aspergillus sp or Mortierella sp.
