PROBLEM TO BE SOLVED: To provide oily substance-containing gel compositions and the like which sufficiently contain oil.SOLUTION: A production method of an oily substance-containing composition comprises the steps of: (1) mixing a galactose partial decomposition products of galacto-xyloglucan with an aqueous solvent at room temperature to obtain a mixture (2) cooling or freezing the mixture obtained in the step (1) and (3) heating the mixture obtained in the step (2) to gelate it and obtaining a gel composition.
