CONSTITUTION: A novel Pediococcus pentosaceus K-51(KFCC11465P) is able to ferment ginseng. A method for preparing a ginseng fermentation extract comprises: a step of fermenting ginseng powder with Pediococcus pentosaceus K-51(KFCC11465P) at 35-37 degrees Celsius for 3-10 days to obtain fermentation and a step of filtering the fermentation using ethanol, spirit, or butanol at 60-80 degrees Celsius for 2-4 hours.
