PROBLEM TO BE SOLVED: To provide a method for efficiently producing many sheets of thin sliced processed meat as a product with reduced probability of occurrence of defectives in slicing a processed meat product to a very thin thickness.SOLUTION: A processed meat product such as loin ham is sliced in a frozen state into sliced hams 1 with a thickness of 0.3 to 1.5 mm. Many sheets of the sliced hams are stacked to make a laminate 1A formed of thin sliced processed meat products. Since the ham is thin sliced in a frozen state, a cutting blade operates in a stable conditions even for the partial difference in raw material texture, resulting in very few occurrence of cracks and bends in a produced thin sliced processed meat product.COPYRIGHT: (C)2014,JPO&INPIT【課題】食肉加工品を非常に薄い厚みにスライスする際に、不良品の発生する確率を低くし、多数枚の薄切食肉加工品を商品として効率よく実現することが可能な薄切食肉加工品にすることである。【解決手段】 ロースハムなどの食肉加工品を凍結状態で厚さ0.3~1.5mmにスライスした薄切ハム1とし、その多数枚を積層した薄切食肉加工品の積層体1Aとする。凍結状態のままで薄切するので、原材料に部分的な肉質の違いがある場合にも切刃が安定して作用し、得られた薄切食肉加工品に割れや折れ曲がりの発生が極めて少なくなる。【選択図】図2
