PROBLEM TO BE SOLVED: To provide a method for manufacturing an oil and fat composition in which an oil and fat containing a triene fatty acid has a low content of a trans acid, and which is excellent in flavor and flavor stability, and the oil and fat composition, and to provide a method for manufacturing an oil and fat composition which can be suitably used for realizing the control of the temperature, in the case of changing the deodorization temperature in a continuous deodorizing process.SOLUTION: The method for manufacturing an oil and fat composition comprises a process of deodorizing the first oil and fat containing 40% by mass or more of a triene fatty acid at a temperature in the range of 198-247°C and a process of blending, within 16 hours after the deodorization of the first oil and fat, the above deodorized first oil and fat and the second oil and fat having been deodorized, in such a manner that the triene fatty acid content is 5-50% by mass relative to the whole fatty acid constituting the oil and fat.COPYRIGHT: (C)2009,JPO&INPIT【課題】トリエン脂肪酸を含有する油脂のトランス酸含量が低く、かつ、風味および風味安定性が良好な油脂組成物の製造方法および該油脂組成物を提供する。また、連続的に行われる脱臭工程において脱臭温度を変化させた場合における温度のコントロールを実現できる油脂組成物の製造方法を提供する。【解決手段】本発明の油脂組成物の製造方法は、トリエン脂肪酸を40質量%以上含有する第1の油脂を198~247℃の範囲内の温度で脱臭する工程と、第1の油脂の脱臭後16時間以内に、当該脱臭した第1の油脂と、脱臭済みの第2の油脂とをトリエン脂肪酸の含有量が油脂を構成する全脂肪酸に対して5~50質量%になるようにブレンドする工程とを有することを特徴とする。【選択図】図1
