PROBLEM TO BE SOLVED: To provide a method for decreasing a glycidol content and a glycidol fatty acid ester content in oil and fat and a manufacturing method of an oil and fat composition decreased in a glycidol content and in a glycidol fatty acid ester content.SOLUTION: Oil and fat containing more than 0.135×10-5 mol/kg of the total of glycidol and a glycidol fatty acid ester is treated with acid activated clay and/or activated carbon and subsequently subjected to deodorization at 200-250°C to give an oil and fat composition having a total content of glycidol and the glycidol fatty acid ester of at most 2.70×10-5 mol/kg even after deodorization.COPYRIGHT: (C)2012,JPO&INPIT【課題】 油脂中のグリシドール及びグリシドール脂肪酸エステルの含有量を低減する方法並びにグリシドール及びグリシドール脂肪酸エステルの含有量を低減した油脂組成物の製造方法を提供する。【解決手段】 グリシドール及びグリシドール脂肪酸エステルを合計で0.135×10-5mol/kgよりも多く含有する油脂を酸性活性白土及び/又は活性炭で処理し、その後200~250℃で脱臭することで、脱臭後においてもグリシドール及びグリシドール脂肪酸エステルの含有量が合計で2.70×10-5mol/kg以下の油脂組成物を得ることができる。【選択図】なし
