The disclosure relates to the use of alternan as emulsifier； a homogeneous composition comprising alternan, water and a fat or oil； the use of the homogeneous composition as emulsifier in foodstuffs or cosmetic preparations； and foodstuffs, particularly dairy products comprising alternan as emulsifier or a homogeneous composition comprising alternan. The specification also describes the use of alternan in cosmetic preparations selected from deodorants, antiperspirants, antiperspirant/deodorants, shaving products, skin creams and lotions, moisturizers, toners, bath products, cleansing products, hair care products, nails creams and lotions, cuticle softeners, protective creams, and other personal care formulations.
