PURPOSE: A cultivating method of fruits and vegetables is provided to manufacture chitooligosaccharide which is low-molecularized to a condition that fruits and vegetables can be absorbed by being resolved to an oligomer form in a short reaction time. CONSTITUTION: A cultivating method of fruits and vegetables comprises the steps of: mixing a fixed amount of 0.1-3% chitosan aqueous solution comprising chitosan having a molecular weight of over 200,000 (Mw) with a fixed amount of chitosanase strain culture; culturing the chitosanase by keeping the mixture for 1-4 hours; putting the mixture containing the cultured chitosanase into a mixer after filling up the mixer with the 0.1-3% chitosan aqueous solution; mixing the mixture in a mixer at 500-1500 rpm for 5-15 minutes; mixing the mixture at 100-300 rpm for 2-10 hours; and injecting the produced chitooligosaccharide to fruits and vegetables. The chitonase is a strain among Rhizopus sp., Streptomyces griseus, Bacillus sp., Trichoderma hamatum, Trichoderma harzianum, Pseudomonas putida, and Pseudomonas aeruginosa.
