PROBLEM TO BE SOLVED: To provide a method for producing spherical frozen octopus dumplings using an octopus dumpling baking apparatus equipped with an automatic reversing apparatus.SOLUTION: Wheat flour, water, and yeast are mixed at the ratio of 1,000:2,000 to 2,700:2-20 by mass, and a mixture is fermented for 20-120 minutes in a state of being maintained at 20-40°C to produce dough. The dough is filled in recesses of an octopus dumpling mold, and after supplying ingredients, baking and reversing are repeated to obtain spherical octopus dumplings.
